Bookings use start and end hours
A booking can start and end at any time. Availability checks overlapping hours, including setup and teardown buffers, and the calendar marks a day full only when those hours are taken.

- Create a booking with start and end time pickers. Live feedback shows overlapping bookings, and admins can still override with a reason.
Improved
- Capacity is concurrent per catering service. Ranges that only touch, such as 1:00 PM to 6:00 PM and 6:00 PM to 11:00 PM, are allowed.
- The bookings calendar reuses the orders hourly grid. A booking blocks only its hours, so a day stays open when later hours are free.
